Still, sencha might have remained a farmer’s secret if not for the wandering Zen monk Baisao (1675–1763). Tired of the rigid formalities of matcha ceremonies, he carried a simple kettle and humble packets of sencha through the streets of Kyoto. There, he brewed tea for common folk and scholars alike, serving it with poetry, philosophy, and laughter.
To Baisao, tea was not about ceremony or perfection — it was about sharing a moment of clarity beneath the open sky, honoring the leaf, the water, and the light of day. His unpretentious practice, later known as Senchadō, “the Way of Sencha,” helped popularize the tea we now love, transforming it from a humble leaf into a philosophy of balance, mindfulness, and renewal.

1-2 teaspoon of our sencha leaves - The Green Leaf Thief
200ml hot water (160–175°F / 70–75°C)
Optional: lemon zest or honey for brightness

- Heat the Water Gently – Sencha prefers cooler water. Boiling will scorch its leaves.
- Add the Leaves – Place sencha into a teapot or strainer.
- Steep Briefly – Pour water and let steep for 1–2 minutes only. A short steep keeps it bright and sweet.
